Spinach and Taleggio Flan
17/11/2023The spinach and taleggio flan is a refined and flavorful dish, combining the sweetness of spinach with the creaminess of taleggio. Here’s how to prepare it.
Ingredients
- 400 g of fresh spinach
- 200 g of taleggio cheese
- 3 eggs
- 200 ml of fresh cream
- Nutmeg q.b.
- Salt and pepper q.b.
- Butter for greasing the molds
- Breadcrumbs for sprinkling the molds
Preparation
- Start by preheating the oven to 180°C.
- Clean the spinach, rinse it, and boil it in a little salted water for a few minutes. Drain well and squeeze to remove all the excess water.
- In a bowl, beat the eggs and add the fresh cream. Mix well to combine.
- Cut the taleggio into cubes and roughly chop the spinach.
- Add the spinach and taleggio to the mixture of eggs and cream. Season with salt, pepper, and a grating of nutmeg. Gently mix everything together.
- Grease individual molds with butter and sprinkle them with breadcrumbs.
- Fill the molds with the mixture of spinach, taleggio, eggs, and cream.
- Place the molds in a baking dish and fill the dish with hot water up to about halfway up the molds (bain-marie cooking).
- Bake and cook the flan for about 25-30 minutes or until they turn golden on the surface and are well cooked inside.
- Allow to cool slightly before unmolding the flan onto a serving plate.
Remember to serve the flan warm so that the taleggio inside can be best appreciated for its creaminess.

The term “flan” comes from the Latin “flado,” meaning “cake” or “crust-based dish,” although the modern version often does not include a crust. This preparation can be adapted with different fillings and condiments, but combining spinach with a stringy cheese like taleggio creates a very pleasant contrast on the palate.
