Meatloaf stuffed with spinach and provola

The meatloaf stuffed with spinach and provola is a rich and tasty dish that encapsulates the flavors of traditional Italian cuisine. Here’s how to prepare it.

Ingredients

  • 500 g of ground meat (you can use beef, pork, or a mix)
  • 100 g of stale bread
  • 120 ml of milk
  • 2 eggs
  • 50 g of grated Parmesan cheese
  • Salt and pepper to taste
  • Nutmeg to taste
  • 200 g of clean spinach
  • 150 g of smoked provola (or scamorza)
  • Breadcrumbs as needed
  • Extra virgin olive oil as needed
  • Garlic (optional)

Preparation

  1. Begin by soaking the stale bread in milk until it softens completely.

  2. While the bread is soaking, cook the spinach in a pan with a drizzle of oil and a clove of garlic until it has wilted. You can add a pinch of salt. Once cooked, squeeze them to remove the excess water and chop them coarsely.

  3. Squeeze the bread well to eliminate the excess milk and place it in a large enough bowl. Add the ground meat, eggs, grated cheese, a pinch of salt, pepper, and grated nutmeg.

  4. Knead all the ingredients with your hands until the mixture is homogeneous and workable. If necessary, add some breadcrumbs to reach the desired consistency.

  5. Spread the meat mixture on a sheet of parchment paper, forming a rectangle about 1.5 cm thick.

  6. Distribute the chopped spinach evenly on the meat rectangle, leaving a free edge of about 2 cm around. Add the smoked provola on top of the spinach, sliced or cubed.

  7. With the help of the parchment paper, gently roll up the meatloaf onto itself, sealing the ends well and shaping it evenly.

  8. Transfer the meatloaf to a baking tray lined with parchment paper, drizzle with oil and breadcrumbs and bake in a preheated oven at 180 °C for about 45-60 minutes, until it is golden brown and well cooked inside.

  9. Let the meatloaf rest for a few minutes before slicing and serving.
