Spicy Salami Quiche

I can guide you through the preparation of a spicy salami quiche, a variation of the traditional French quiche with an Italian twist thanks to the addition of spicy salami. Here are the ingredients and the procedure:

Ingredients

  • 1 roll of ready-made brisée dough (or puff pastry if you prefer)
  • 150 g of spicy salami, sliced or diced
  • 3 eggs
  • 200 ml of cream for cooking
  • 100 g of grated cheese (such as emmental or gruyère)
  • Salt and pepper to taste
  • 1 tablespoon of olive oil (if you want to sauté the salami)
  • Aromatic herbs to taste (such as thyme or chives), optional

Preparation

  1. Preheat the oven to 180 °C.
  2. Unroll the brisée dough and place it in a quiche pan, making sure the dough sticks well to the edges. Prick the bottom with the tines of a fork.
  3. In a pan, you can choose to lightly sauté the salami with a tablespoon of olive oil to enhance its flavor, but this step is optional.
  4. Spread the spicy salami over the pastry base.
  5. In a bowl, beat the eggs with the cooking cream, grated cheese, salt, and pepper to taste, and the aromatic herbs if you decide to use them.
  6. Pour the egg mixture over the pastry with the salami, making sure it’s leveled.
  7. Bake the quiche for about 30-35 minutes or until the surface is golden brown and the filling has set.
  8. Let it cool for a few minutes before cutting and serving.

The quiche can be served as an appetizer, main dish or side dish, and is good both hot and cold.

Curiosity

Quiche is a very versatile dish that you can personalize in many ways, by changing the type of cured meat, cheese, or adding vegetables. In France, the most famous quiche is the Lorraine, which includes bacon and traditionally does not have cheese in its original recipe. The addition of spicy salami gives it a bold taste that can remind one of Italian flavors.
