Spicy rice with fried egg

Ingredients
- 200g of rice (Basmati or Jasmine for a fragrance and texture in line with Asian dishes)
- 2 eggs
- 1 fresh red chili pepper (or chili powder if you prefer)
- 2 tablespoons of extra-virgin olive oil (or seed oil if you want to be more faithful to the Asian version)
- 1 clove of garlic
- Soy sauce (to taste)
- Salt (as needed)
- Black pepper (to taste)
- Herbs such as basil or parsley (optional, for an Italian touch to the dish)
- Parmesan or grated parmesan (for a very Italian variant)
Preparation
- Start by washing the rice under running water until the water runs clear. This step will help remove the excess starch and make the rice fluffier and less sticky.
- Cook the rice in boiling salted water according to the package instructions, then drain and set aside.
- Finely slice the garlic and the chili pepper (remember to wash your hands after touching the chili and to remove the seeds if you prefer a less spicy dish).
- In a large frying pan, heat the extra-virgin olive oil and add the garlic and chili to sauté gently, then add the cooked rice.
- Stir the rice in the pan with the garlic and chili, making sure to flavor it well. Add the soy sauce and continue to stir to distribute the seasoning evenly.
- In a separate pan, heat a drizzle of oil and fry the eggs until the whites are fully cooked and the yolks are semi-liquid. Season with salt and pepper to taste.
- Plate the rice, placing a fried egg on top of each portion.
- (Optional) Finish the dish by sprinkling some finely chopped herbs and/or a dusting of Parmesan or grated parmesan, for a true Italian “twist.”
