Ingredients
- 1 kg of pork ribs
- Salt to taste

- 1 tablespoon of crushed fennel seeds

- 2 tablespoons of extra virgin olive oil
For the citrus glaze:
- Juice of 2 oranges
- Juice of 1 lemon
- Grated zest of 1 orange

- 2 tablespoons of honey
- 1 tablespoon of Dijon mustard
- 1 tablespoon of balsamic vinegar
Preparation
- Prepare the marinade by mixing the spices with the extra virgin olive oil. Rub the ribs with this mixture, along with salt and pepper, and let them marinate covered in the fridge for at least 2 hours.
- Preheat the oven to 160°C. Place the ribs on a baking sheet lined with parchment paper, add the crushed garlic, rosemary, and bay leaves, cover with aluminum foil, and bake for about 2 hours, until the ribs are tender.
- While the ribs are baking, prepare the glaze by mixing in a saucepan the citrus juice and zest, honey, mustard, and balsamic vinegar. Bring to a boil and reduce until a syrupy consistency is obtained.
- Once the ribs are cooked, remove the aluminum foil, brush with the glaze and increase the oven temperature to 200°C. Caramelize for about 10-15 minutes, turning the ribs occasionally to glaze them evenly.
- Serve the ribs hot, accompanied, if desired, with a side of seasonal vegetables sautéed in a pan.
