Wrap with Spicy Hummus and Vegetables
17/11/2023The wrap with spicy hummus and vegetables is a fresh, colorful dish full of flavors. Here is a version that I hope you will like, with an Italian touch that you can appreciate.
Ingredients
- 4 flour wraps (you could also use whole wheat flatbreads for an Italian touch)
- 200 g of cooked chickpeas
- 1 clove of garlic
- The juice of 1 lemon
- 2 tablespoons of tahini (sesame paste)
- A pinch of salt
- Chili powder or fresh to taste
- 2 tablespoons of extra virgin olive oil
- 1 zucchini
- 1 red bell pepper
- 1 carrot
- Fresh spinach leaves
- Toasted sesame seeds for garnish (optional)
- Fresh chopped parsley for garnish (optional)

Start with the spicy hummus: in a blender or with an immersion mixer, combine chickpeas, lemon juice, tahini, garlic, a drizzle of oil, salt, and chili. Blend until smooth and adjust the chili to your taste for spiciness.

Cut the zucchini into thin strips, the red bell pepper, and carrot into slices. If you wish, you can grill the zucchini and bell pepper to enhance the flavor.

On the surface of each wrap, spread a uniform layer of spicy hummus. In the center of the wrap, place the raw (or grilled) vegetables, add fresh spinach leaves and sprinkle with toasted sesame seeds and chopped fresh parsley if you like.

To roll the wrap, first fold the sides towards the center and then roll the wrap starting from the edge closest to you towards the opposite edge, to close the contents inside.

For a crunchy touch, you can heat the stuffed wraps in a non-stick skillet for a couple of minutes on each side until they become slightly golden.

Serve the wraps immediately or wrap them in cling film for a packed lunch.

Hummus has Middle Eastern origins and has spread throughout the world, becoming very popular in Italy as well. In some Italian versions, local ingredients such as olives or sun-dried tomatoes are used to add a Mediterranean touch.
