Spicy Chicken Skewers

Here’s the recipe to prepare spicy chicken skewers with an Italian twist. This recipe will incorporate some chili pepper and fresh rosemary for an aromatic flavor and a touch of zestiness.

Ingredients

  • 500 g of chicken breast
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • 1 fresh chili pepper (or chili powder, according to spiciness preference)
  • Fresh rosemary to taste
  • Juice of 1 lemon
  • Salt to taste
  • Pepper to taste
  • Wooden or metal skewers

Preparation

  1. Cut the chicken breast into cubes of about 2-3 cm to make the skewers.
  2. In a bowl, prepare the marinade by mixing the extra virgin olive oil, finely chopped garlic, chili sliced into rings (remove the seeds if you want less spiciness), chopped rosemary, lemon juice, salt, and pepper. Mix well.
  3. Soak the chicken cubes in the marinade and let them rest for at least 30 minutes to allow the flavors to meld. If you have time, marinating for a few hours or overnight in the refrigerator will intensify the flavor.
  4. Prepare the skewers by threading the marinated chicken cubes onto the wooden or metal sticks.
  5. Heat a grill or grill pan over medium-high heat. If using wooden skewers, remember to moisten them first to prevent burning.
  6. Cook the chicken skewers on the grill or pan for about 4-5 minutes per side, until the chicken is well cooked and has a nice golden color.
  7. Serve hot, possibly with a sprinkling of fresh rosemary or with an extra squeeze of lemon to taste.

Trivia

Skewers are a great way to serve chicken on convivial occasions, such as barbecues or picnics. The spicy marinade with a citrus like lemon and aromatic herbs like rosemary is a typical example of how Italian cuisine can enhance simple but intense flavors.

If you’re looking for a wine pairing, these skewers go well with a fresh, fruity white, such as an Italian Sauvignon Blanc, which can pleasantly contrast the spiciness of the dish.
