Spelt with Swordfish

Preparation

  3. Add the cherry tomatoes cut in half and let them cook for a few minutes until they start to split.
  4. Add the swordfish cut into cubes, a pinch of salt and pepper, and cook over medium heat for about 5-7 minutes, turning them gently to prevent them from breaking.
  5. Once the spelt is cooked, drain it and add it to the pan with the tomatoes and swordfish.
  6. Gently mix everything to enhance the flavors and combine them.
  7. Finish by adding fresh chopped parsley and the grated zest of a lemon, and if you like, a drizzle of raw extra virgin olive oil.
  8. Plate and add a drizzle of fresh lemon juice before serving.
