Ingredients

  • 250 g of spelt tagliolini
  • 200 g of asparagus
  • 200 g of fresh or rehydrated porcini mushrooms

Preparation

  1. Clean the asparagus by removing the woody part of the stalk and cut them into pieces of about 2-3 cm. If you are using dried porcini mushrooms, rehydrate them in warm water for about 20 minutes, then squeeze them out and slice them. If you have fresh mushrooms, clean them and slice them.
  2. In a large frying pan, heat a drizzle of extra virgin olive oil and sauté the whole garlic clove until golden, then remove it.
  3. Add the asparagus and cook over medium-low heat for about 5-10 minutes, adding a little water or vegetable broth if necessary to prevent sticking.
  4. Add the porcini mushrooms and cook for another 5-8 minutes. Adjust the seasoning with salt and pepper.
  5. Meanwhile, bring a pot of salted water to a boil and cook the spelt tagliolini according to the instructions on the package, usually for a few minutes as they cook quickly.
  6. Drain the tagliolini al dente and transfer them into the frying pan with the asparagus and porcini, tossing everything to blend the ingredients.
  7. If desired, add chopped parsley and a sprinkle of cheese before serving.
