Spelt Gnocchi with Parmesan Cream

Here is the recipe for Spelt Gnocchi with Parmesan Cream. A dish that combines the Italian tradition of gnocchi with the tasty and rich flavor of Parmesan.

Ingredients

  • 1 kg of potatoes
  • 250 g of spelt flour
  • 1 egg
  • Salt to taste
  • Nutmeg to taste (optional)
  • 200 g of Parmigiano cheese (to be grated)
  • 150 ml of cooking cream
  • Black pepper to taste
  • Fresh sage (a few leaves)
  • Butter to taste

Preparation

  1. Start by cooking the potatoes. Wash and boil the potatoes with their skin on in a pot with plenty of salted water until they become soft. Once cooked, drain them, peel them, and mash them while still hot with a potato masher or a vegetable crusher until a smooth mixture is obtained.

  2. Add the egg, a pinch of salt, and nutmeg (if you like) to the mashed potatoes. Then, gradually incorporate the spelt flour until you obtain a smooth and non-sticky dough. Adjust the flour if necessary.

  3. Flour a work surface and take a portion of the dough. Roll with your hands to form cords about 2 cm in diameter, then cut these into small pieces of about 2 cm to form the gnocchi. If you wish, you can roll each gnocco on a fork or on a special gnocchi board to give it the typical indentations.

  4. Bring a pot of salted water to a boil and cook the gnocchi in small amounts at a time. They will be ready when they float to the surface, which usually happens in a few minutes. Remove them with a slotted spoon.

  5. For the Parmesan cream, heat the cooking cream in a small saucepan and add the grated Parmigiano. Allow the cheese to melt completely, stirring constantly to prevent it from sticking, until you get a smooth cream. Season with pepper to taste.

  6. In a large pan, melt some butter and sauté the gnocchi until they are lightly browned. Add the Parmesan cream and stir carefully to evenly coat the gnocchi.

  7. Serve immediately, garnishing with fresh sage leaves and, if you want, an extra grating of Parmesan.

Spelt is a very ancient cereal and appreciated for its nutritional properties. Using spelt flour in gnocchi gives a rustic note and a unique flavor to the dish, as well as making it slightly different from the classic potato gnocco.

If you want an extra touch, you can toast some pine nuts in a pan and sprinkle them over the gnocchi before serving, they will add a pleasant crunchiness.
