Spelt and Shrimp Salad

The spelt and shrimp salad is a fresh and tasty dish, ideal for the warm summer days. Italian cuisine loves to play with sea flavors and land products, making this salad perfect for a Mediterranean touch.

Ingredients

  • 150 g of pearled spelt
  • 200 g of cleaned shrimp
  • Arugula to taste
  • Cherry tomatoes to taste
  • 1 lemon
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • A sprig of fresh parsley
  • 1 clove of garlic (optional)

Preparation

  1. Start by cooking the spelt in salted water according to the package instructions. Once cooked, drain and let it cool.
  2. Cook the shrimp in a pan with a drizzle of oil and a clove of garlic, if desired. Season with salt, pepper and deglaze with the juice of half a lemon. Let the shrimp cool down once cooked.
  3. Wash the cherry tomatoes and cut them in half. Wash and dry the arugula.
  4. In a large bowl, mix the spelt with the cherry tomatoes, arugula, and shrimp. Season with extra virgin olive oil, salt, pepper, and the remaining lemon juice.
  5. Sprinkle with finely chopped fresh parsley.
  6. Let rest in the refrigerator for at least half an hour before serving to allow the flavors to meld together.
