Spelt and Orange Cookies
17/11/2023Spelt cookies with orange are a delicious choice for a light and fragrant treat. Here’s how to prepare them.
Ingredients
- 200 g of spelt flour
- 100 g of brown sugar
- 80 g of butter at room temperature
- Grated zest of 1 orange (organic if possible)
- 1 egg
- 1 pinch of salt
- 1/2 teaspoon of baking soda
- 1 tablespoon of orange juice
- (Optional) a few drops of vanilla extract to enhance the flavor
Preparation
- In a large bowl, mix together the spelt flour, baking soda, and salt.
- In another bowl, work the soft butter with the brown sugar until you get a frothy and light mixture.
- Add the egg to the mixture of butter and sugar and mix well to incorporate it.
- Incorporate the grated orange zest and orange juice into the mixture. If you have chosen to use it, also add the vanilla extract.
- Combine the mix of dry ingredients (flour, baking soda, and salt) with the wet mixture and mix until you obtain a homogeneous dough. If the dough is too sticky, you can add a little more spelt flour.
- Form balls with the dough and slightly flatten them. Arrange the balls on a baking sheet lined with parchment paper, keeping a certain distance between one cookie and the other.
- Preheat the oven to 180 °C and, when hot, bake the cookies for about 10-15 minutes or until they are slightly golden.
- Remove the cookies from the oven and let them cool on a rack.
