Spelt and Orange Cookies

Spelt cookies with orange are a delicious choice for a light and fragrant treat. Here’s how to prepare them.

Ingredients

  • 200 g of spelt flour
  • 100 g of brown sugar
  • 80 g of butter at room temperature
  • Grated zest of 1 orange (organic if possible)
  • 1 egg
  • 1 pinch of salt
  • 1/2 teaspoon of baking soda
  • 1 tablespoon of orange juice
  • (Optional) a few drops of vanilla extract to enhance the flavor

Preparation

  1. In a large bowl, mix together the spelt flour, baking soda, and salt.
  2. In another bowl, work the soft butter with the brown sugar until you get a frothy and light mixture.
  3. Add the egg to the mixture of butter and sugar and mix well to incorporate it.
  4. Incorporate the grated orange zest and orange juice into the mixture. If you have chosen to use it, also add the vanilla extract.
  5. Combine the mix of dry ingredients (flour, baking soda, and salt) with the wet mixture and mix until you obtain a homogeneous dough. If the dough is too sticky, you can add a little more spelt flour.
  6. Form balls with the dough and slightly flatten them. Arrange the balls on a baking sheet lined with parchment paper, keeping a certain distance between one cookie and the other.
  7. Preheat the oven to 180 °C and, when hot, bake the cookies for about 10-15 minutes or until they are slightly golden.
  8. Remove the cookies from the oven and let them cool on a rack.
