Gnocchi with Speck and Walnuts

Ingredients

  • 500 g of potato gnocchi
  • 100 g of thin slices of speck
  • 100 g of walnut kernels
  • 200 ml of cooking cream
  • 50 g of grated Parmesan cheese
  • Salt and pepper to taste
  • Extra virgin olive oil
  • A few leaves of fresh sage (optional)

Preparation

  1. Put a frying pan on the heat and lightly toast the walnut kernels for a few minutes. Then, roughly chop them and set aside.
  2. In a large frying pan, add a drizzle of olive oil and the slices of speck cut into strips. Sauté until the speck becomes crispy.
  3. Add the cooking cream to the speck and let it warm up. Add the chopped walnuts and mix well. If you like, at this stage you can also add some sage leaves to flavor the sauce.
  4. Cook the gnocchi in a pot of salted water following the instructions on the packaging. The gnocchi are ready when they float to the surface.
  5. Drain the gnocchi with a slotted spoon and transfer them directly into the pan with the speck and walnut sauce.
  6. Gently stir to flavor the gnocchi with the sauce.
  7. Add the Parmesan, a pinch of salt, and pepper to taste and mix for a moment longer.
  8. Serve hot and, if desired, garnish with additional Parmesan shavings or chopped walnuts.
