Pasta speck e zafferano

Ingredients

Preparation

  1. Bring a pot of salted water to a boil and cook the pasta according to the instructions on the package until it is al dente.

  2. In the meantime, in a large skillet, heat a stream of extra virgin olive oil and gently sauté the chopped onion or shallot until it becomes translucent.

  3. Add the speck to the skillet and let it cook until it becomes crispy at the edges.

  4. Dissolve the saffron in a couple of tablespoons of hot water and pour it into the skillet with the speck. Mix well to allow the speck to absorb the flavor and color.
