Ingredients
- 320g of spaghettoni
- 300g of fresh shrimp
- 2 cloves of garlic
- Juice of 1 lemon
- Fresh parsley to taste
- Extra virgin olive oil
- Red chili pepper (optional)
- Salt to taste
- Black pepper to taste

Clean the shrimp by removing the shell and the intestine, then wash them under cold running water and pat them dry. Cut the shrimp into pieces or leave them whole according to your preference.

In a large bowl, season the shrimp with lemon juice, extra virgin olive oil, salt, and black pepper. If you like a spicy touch, you can also add some chopped red chili pepper. Mix well and let marinate in the fridge for at least 15-30 minutes.

Meanwhile, bring a pot of generously salted water to a boil. Cook the spaghettoni in it, following the cooking time indicated on the package to have them al dente.

While the pasta is cooking, in a large pan, make a light sauté with garlic and oil. If using whole garlic, let it lightly brown and then remove it. If you prefer, you can finely chop it and leave it in the pan.

Drain the pasta, reserving some of the cooking water, and pour it into the pan with the oil and garlic, tossing to blend the flavors.

Turn off the heat and add the marinated shrimp to the spaghettoni, stirring well to warm the shrimp with the residual heat of the pasta without cooking them.

Serve immediately after garnishing with finely chopped fresh parsley.
