Spaghettini with Marinated Beef and Vegetables

Ingredients
- 200g spaghettini
- 300g beef (cut into thin strips)
- 1 zucchini
- 1 carrot
- 1 red bell pepper
- 1 onion
- 2 cloves garlic
- 4 tablespoons extra virgin olive oil
- Salt and pepper to taste
- For the marinade:
- 2 tablespoons soy sauce
- 1 tablespoon balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1 teaspoon brown sugar
- 1 teaspoon chopped rosemary
- 1 teaspoon dried oregano
- Black pepper to taste
Preparation
- Start with the marinade: in a bowl, mix the soy sauce, balsamic vinegar, oil, brown sugar, rosemary, oregano, and a sprinkling of pepper. Submerge the beef strips in the marinade and let them rest for at least 30 minutes, but preferably a couple of hours.
- While the beef marinates, cut the zucchini and bell pepper into sticks, the carrot into julienne, and finely slice the onion and garlic.
- In a large pan, heat two tablespoons of oil and sauté the garlic and onion until golden. Add the chopped vegetables, season with salt and pepper, then sauté for about 5-7 minutes until they are crispy yet cooked.
- In another pan, heat two tablespoons of oil and cook the beef over high heat for a few minutes, until well-browned on the outside but still tender inside. If necessary, do this in batches to avoid overloading the pan and allow the beef to cook evenly.
- Cook the spaghettini in plenty of salted water following the package instructions to achieve al dente texture.
- When pasta is ready, drain it and add it to the pan with the vegetables and beef. Stir well to flavor the spaghettini.
- Serve immediately, garnishing with a sprinkle of fresh herbs or grated Parmesan cheese if desired.
