Spaghetti alle telline
17/11/2023Spaghetti with telline clams is a typically summer dish and very much appreciated for its delicate flavor and ease of preparation. Here is the recipe to prepare excellent spaghetti with telline.
Ingredients
- 350 g of spaghetti
- 1 kg of telline clams
- 1 clove of garlic
- Fresh parsley to taste
- Extra virgin olive oil
- Chili pepper (optional)
- Salt to taste
- White wine (one glass)
Preparation
- First, clean the telline clams well by soaking them in cold salted water for at least an hour to expel the sand. Change the water a couple of times during the process.
- Drain the telline clams and rinse them under running water.
- In a large pan, sauté the chopped garlic (and chili pepper if you wish) in plenty of extra virgin olive oil.
- Add the telline clams to the pan and let them open over a high flame. During cooking, deglaze with a glass of white wine and allow the alcohol to evaporate.
- Meanwhile, cook the spaghetti in plenty of salted water following the cooking times indicated on the package for al dente pasta.
- As soon as the telline clams have opened (discard those that remain closed), add the chopped fresh parsley and keep warm.
- Drain the spaghetti and pour them into the pan with the telline clams. Toss everything for a few minutes so the pasta absorbs the flavor of the telline clams and the sauce.
- Plate and serve immediately.
If you don’t have telline clams, you can try with clams, the taste will be slightly different but equally delicious. Remember that the quality of the telline clams is fundamental to the success of this dish.
