Spaghetti with walnuts, basil, and cherry tomatoes

This is a simple yet delicious dish that combines the sweetness of cherry tomatoes, the creaminess of walnuts, and the fresh aroma of basil. Here’s the recipe for spaghetti with walnuts, basil, and cherry tomatoes.

Ingredients

  • 320 g of spaghetti
  • 200 g of cherry tomatoes
  • 100 g of shelled walnuts
  • A bunch of fresh basil
  • 1 clove of garlic
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste
  • Chili pepper (optional)
  • Grated Parmesan (optional)

Preparation

  1. Start by preparing the sauce. Wash the cherry tomatoes and cut them in half or into quarters, depending on your preference.
  2. Lightly toast the walnuts in a non-stick pan, taking care not to burn them. Once cooled, chop them coarsely with a knife or a mixer, but do not reduce them to a powder.
  3. In a wide pan, heat the extra virgin olive oil and add the whole garlic clove. If you wish, you can also add a bit of chili pepper.
  4. Once the garlic is golden, remove it and add the cut tomatoes. Let them sauté for a few minutes until they start to release their juice.
  5. Add the chopped walnuts to the pan with the tomatoes and let them flavor for a couple of minutes on low heat. Season with salt.
  6. Meanwhile, bring a pot with plenty of salted water to a boil and cook the spaghetti al dente following the instructions on the package.
  7. Drain the pasta and pour it into the pan with the tomato and walnut sauce. Add the fresh basil torn by hand and mix well to blend the ingredients.
  8. Serve immediately, and if you like, add a sprinkle of grated Parmesan.
