Spaghetti alle noci

Ingredients
- 400 g of spaghetti
- 200 g of nuts
- 1 clove of garlic
- 100 g of cooking cream
- grated Parmesan cheese to taste
- Extra virgin olive oil
- Salt to taste
- Pepper to taste (optional)
Preparation
- Start by lightly toasting the nuts in a dry pan for 2-3 minutes. Then finely chop them with a food processor or with a mortar.
- In a large pan, heat a drizzle of extra virgin olive oil and fry the clove of garlic until it becomes golden, then remove it.
- Add the chopped nuts in the oil and let them toast for a few minutes, taking care not to burn them.
- Pour the cream into the pan with the nuts, mix well and let it cook for 3-4 minutes until the sauce slightly thickens. Season with salt and, if you like, add a pinch of pepper.
- In the meantime, cook the spaghetti in plenty of salted water following the package instructions to have them al dente.
- Drain the spaghetti and add them directly into the nut sauce, mixing well to flavor them.
- Serve immediately with a sprinkle of grated Parmesan cheese on each plate.

The nut sauce, or “salsa di noci,” is a traditional recipe that often includes stale bread soaked in milk and Parmesan or Pecorino cheese to make the sauce even creamier.
