Ingredients
- Spaghetti: 320 g
- Oil-packed Tuna: 200 g (preferably conserved in olive oil)
- Zucchini: 2 medium
- Garlic: 1 clove
- Extra virgin olive oil: as needed
- Salt: as needed
- Black pepper: as needed
- Chopped parsley: as needed (optional)
Preparation
- Wash the zucchini, cut them into thin slices or cubes, depending on preference.
- In a pan, sauté the garlic in extra virgin olive oil until golden brown, then remove the garlic.
- Add the zucchini to sauté until they are nicely browned and soft. Season with salt and pepper to taste.
- Meanwhile, cook the spaghetti in plenty of salted water following the cooking times on the package to obtain the desired doneness (al dente is usually preferable).
- Drain the tuna from the excess oil and add it to the zucchini, taking care not to break it up too much. Let it flavor for a few minutes.
- Drain the spaghetti al dente, saving some of the cooking water, and transfer them to the pan with the zucchini and tuna.
- Sauté the pasta together with the seasoning, adding some cooking water if necessary to make the dish creamy.
- Serve the spaghetti hot, with a further sprinkle of pepper and, if desired, some fresh chopped parsley scattered on top.
