Spaghetti with Sun-Dried Tomatoes and Arugula
17/11/2023Spaghetti with sun-dried tomatoes and arugula is a simple, flavorful, and very easy to prepare dish. Here is the recipe:
Ingredients
- 320 g of spaghetti
- 100 g of sun-dried tomatoes in oil
- 2 bunches of arugula
- 2 cloves of garlic
- Extra virgin olive oil
- Salt
- Chili pepper (optional)
- Grated Parmesan or Pecorino cheese (optional)
Preparation
- Boil a pot of salted water for the spaghetti.
- In the meantime, drain the sun-dried tomatoes from the preservation oil and cut them into strips.
- Wash and dry the arugula well, then roughly chop it.
- In a large non-stick pan, sauté the whole garlic cloves with some extra virgin olive oil. If you like, you can also add chili pepper.
- Remove the garlic when it is golden and add the sun-dried tomatoes to the pan, sautéing them for a couple of minutes.
- Cook the spaghetti until it is al dente, then drain it, reserving some of the cooking water.
- Transfer the spaghetti to the pan with the sun-dried tomatoes, add the arugula, and mix well. If necessary, add some of the cooking water to make the sauce lighter and creamier.
- Serve immediately, adding grated Parmesan or Pecorino cheese to taste.
For an all-Italian variant, you can also add finely chopped desalted anchovies, in addition to the Parmesan, to give more intensity to the taste. Enjoy your meal!
