Spaghetti with Sun-Dried Tomatoes and Arugula

Spaghetti with sun-dried tomatoes and arugula is a simple, flavorful, and very easy to prepare dish. Here is the recipe:

Ingredients

  • 320 g of spaghetti
  • 100 g of sun-dried tomatoes in oil
  • 2 bunches of arugula
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt
  • Chili pepper (optional)
  • Grated Parmesan or Pecorino cheese (optional)

Preparation

  1. Boil a pot of salted water for the spaghetti.
  2. In the meantime, drain the sun-dried tomatoes from the preservation oil and cut them into strips.
  3. Wash and dry the arugula well, then roughly chop it.
  4. In a large non-stick pan, sauté the whole garlic cloves with some extra virgin olive oil. If you like, you can also add chili pepper.
  5. Remove the garlic when it is golden and add the sun-dried tomatoes to the pan, sautéing them for a couple of minutes.
  6. Cook the spaghetti until it is al dente, then drain it, reserving some of the cooking water.
  7. Transfer the spaghetti to the pan with the sun-dried tomatoes, add the arugula, and mix well. If necessary, add some of the cooking water to make the sauce lighter and creamier.
  8. Serve immediately, adding grated Parmesan or Pecorino cheese to taste.

For an all-Italian variant, you can also add finely chopped desalted anchovies, in addition to the Parmesan, to give more intensity to the taste. Enjoy your meal!
