Spaghetti with Shrimp, Stracchino, and Saffron

Ingredients

  • 320 g of spaghetti
  • 200 g of cleaned shrimp
  • 150 g of stracchino cheese
  • 1 sachet of saffron
  • 1 clove of garlic
  • Parsley to taste
  • Extra virgin olive oil to taste
  • Salt and pepper to taste

Preparation

  1. In a large pot, bring salted water to a boil for the spaghetti.
  2. Meanwhile, in a large pan, heat a drizzle of oil with a clove of garlic. When the garlic is golden, remove it and add the shrimp.
  3. Sauté the shrimp for a few minutes until they turn pink, then add a sachet of saffron previously dissolved in a little pasta cooking water.
  4. Cook the spaghetti as indicated on the package to achieve an al dente texture.
  5. While the spaghetti is cooking, add the stracchino cheese in pieces to the pan with the shrimp and let it melt, mixing well to create a cream.
  6. Drain the spaghetti and transfer them to the pan with the shrimp and stracchino sauce. Toss everything together for a few minutes to allow the spaghetti to flavor well.
  7. Adjust the salt and pepper to your liking and sprinkle with chopped fresh parsley before serving.
