Ingredients
- 320 g of spaghetti
- 200 g of cleaned shrimp
- 150 g of stracchino cheese
- 1 sachet of saffron
- 1 clove of garlic
- Parsley to taste
- Extra virgin olive oil to taste
- Salt and pepper to taste
Preparation
- In a large pot, bring salted water to a boil for the spaghetti.
- Meanwhile, in a large pan, heat a drizzle of oil with a clove of garlic. When the garlic is golden, remove it and add the shrimp.
- Sauté the shrimp for a few minutes until they turn pink, then add a sachet of saffron previously dissolved in a little pasta cooking water.
- Cook the spaghetti as indicated on the package to achieve an al dente texture.
- While the spaghetti is cooking, add the stracchino cheese in pieces to the pan with the shrimp and let it melt, mixing well to create a cream.
- Drain the spaghetti and transfer them to the pan with the shrimp and stracchino sauce. Toss everything together for a few minutes to allow the spaghetti to flavor well.
- Adjust the salt and pepper to your liking and sprinkle with chopped fresh parsley before serving.
