Spaghetti with Sea Truffles

Ingredients

If you can’t find sea urchins, you might consider alternatives such as clams or scallops for a distinctive sea flavor.

Preparation

  1. Clean the sea urchins by opening them and extracting the edible inner part; perform this operation carefully to not damage the coral. Remember that the regulations for collecting sea urchins can vary based on the region and season, so make sure you comply with them if you decide to gather them yourself.

  2. Heat a drizzle of extra virgin olive oil in a large pan and add the whole garlic. If you want to add a spicy touch, also add some chili pepper.

  3. Add the sea urchin corals to the pan and let them cook for a few minutes, just enough time to flavor the oil. Do not cook them too long to not lose their delicate flavor.

  4. Meanwhile, cook the spaghetti in plenty of salted water following the package instructions to achieve an al dente texture.

  5. Drain the spaghetti and transfer it to the pan with the sea urchin dressing. Sauté everything together for a moment, mixing well to allow the spaghetti to blend with the sauce.

  6. Sprinkle with fresh chopped parsley and, if necessary, adjust for salt.

  7. Serve immediately to best enjoy the intense and unique taste of the sea urchins.
