Ingredients
- 320 g of spaghetti
- 2 medium red onions
- 100 g of sweet gorgonzola
- 60 g of walnuts
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- (optional) Chopped parsley for garnish
- (optional) Grated Parmesan for creaminess

Start by bringing a pot of salted water to a boil to cook the spaghetti. When the water boils, add the pasta and cook according to the instructions on the package to achieve an al dente texture.

In the meantime, thinly slice the red onions and coarsely chop the walnuts.

Heat the oil in a pan over medium heat and add the sliced onions. Slowly sauté until they become translucent and slightly caramelized, stirring occasionally. This may take about 10-15 minutes.

Add the chopped walnuts to the pan with the onions and toast for a couple of minutes, being careful not to burn them.

Cut the gorgonzola into cubes and add it to the pan. Let it melt slightly, creating a creamy sauce with the help of the residual heat and a small addition of the pasta cooking water, if necessary.

When the spaghetti is al dente, drain it, reserving some of the cooking water.

Add the spaghetti to the pan with the onion, walnut, and gorgonzola sauce. Toss everything together for a minute or two, adding a bit of cooking water if the sauce is too thick. Adjust salt and pepper to taste.
