Spaghetti with Razor Clams

Spaghetti with razor clams is a delicious dish that combines the taste of the sea with the simplicity of pasta. Here’s what you’ll need and how to prepare it.

Ingredients

  • 400g of spaghetti
  • 500g of razor clams
  • 2 cloves of garlic
  • Parsley to taste
  • 1 chili pepper (optional)
  • 100ml of white wine
  • Extra virgin olive oil
  • Salt to taste

Preparation

  1. Start with cleaning the razor clams. Usually, you should let them purge in salted water for a few hours before cooking to expel any sand they might contain.
  2. After this time, rinse them under running water and remove any film covering the end part of the mollusk.
  3. In a large pan, sauté the garlic cloves in a drizzle of extra virgin olive oil and, if you like, add the chili pepper.
  4. When the garlic is golden, add the razor clams to the pan and cook for about a couple of minutes.
  5. Deglaze with white wine and let the alcohol evaporate, then lower the flame and cover the pan, cooking for about 5 minutes, until the razor clams have all opened.
  6. Meanwhile, bring a pot of salted water to a boil and cook the spaghetti. Drain them al dente and reserve some of the cooking water.
  7. Transfer the pasta to the pan with the razor clams, add a ladle of cooking water if necessary to combine everything and sauté briefly.
  8. Sprinkle with freshly chopped parsley and serve immediately.

Remember that it is important not to consume any razor clams that have not opened during cooking, as this could indicate that they are not fresh or edible.
