Spaghetti with Mussels in White Wine Sauce

Ingredients

  • 400g of spaghetti
  • 1kg of fresh and cleaned mussels
  • 4 tablespoons of extra virgin olive oil

  • 1/2 glass of dry white wine
  • Salt to taste

Preparation

  1. Start by preparing the mussels. They should already be clean, but if necessary, clean them by removing the external filaments and scrubbing them under running water. Discard any that are open or damaged.

  2. In a large pan, sauté the garlic cloves with the extra virgin olive oil. If you like, you can add some chilli pepper to give the dish a spicy note.

  3. Add the mussels to the pan and cover with a lid, letting them open over medium heat. It usually takes about 5-7 minutes. As soon as they have opened, remove those that have stayed closed, as they may not be good.

  4. Pour in the half glass of white wine and let the alcohol evaporate on high heat for a couple of minutes.

  5. In the meantime, cook the spaghetti in plenty of salted water following the package instructions to achieve an al dente texture.

  6. When the spaghetti is ready, drain it and transfer to the pan with the mussels. Stir well in the sauce, if necessary add a little cooking water from the spaghetti to make it creamier.

  7. Sprinkle with chopped fresh parsley and plate the spaghetti with mussels, making sure each dish has an equal number of mussels.

  8. Serve immediately, to enjoy the dish at its best!
