Spaghetti with Mushrooms, Artichokes and Cherry Tomatoes

Here is a delicious Italian recipe to prepare Spaghetti with Mushrooms, Artichokes and Cherry Tomatoes. It’s a springtime dish that’s flavorful and colorful.

Ingredients

  • 320 g of spaghetti
  • 200 g of mixed mushrooms (champignon, porcini, chiodini, etc.)
  • 4 artichokes
  • 150 g of cherry tomatoes
  • 2 cloves of garlic
  • Fresh parsley to taste
  • 4 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • 60 ml of white wine
  • Grated Parmesan cheese (optional)

Preparation

  1. Clean the mushrooms by removing the earthy part of the stem and brushing them gently. Slice them or cut them into pieces.

  2. Clean the artichokes by removing the tougher outer leaves, the thorny tips, and the inner hay. Cut them into wedges and put them in acidulated water with lemon to prevent them from blackening.

  3. Wash the cherry tomatoes and cut them in half.

  4. In a large skillet, heat the olive oil with the garlic cloves. As soon as the garlic turns golden, remove it and add the mushrooms. Sauté for a few minutes then add the well-drained artichokes. Season with salt and pepper and continue cooking over medium heat for about 5-8 minutes.

  5. Deglaze with the white wine and let the alcohol evaporate.

  6. Add the cherry tomatoes, lower the heat and continue cooking for another 5 minutes, until the artichokes are tender.

  7. In the meantime, bring a pot of salted water to a boil and cook the spaghetti al dente. Drain them and transfer them to the skillet with the mushroom, artichoke, and cherry tomato sauce.

  8. Toss the spaghetti in the skillet with the sauce for a few minutes, so they absorb the flavors well. If necessary, add a little cooking water to make the sauce creamier.

  9. Serve hot, with a sprinkling of chopped fresh parsley and grated Parmesan cheese if you like.
