Spaghetti with Red Mullet Sauce

Spaghetti with red mullet sauce is a refined and tasty dish that brings together land and sea. A Mediterranean dish with a unique and delicious flavor. Here is how to prepare it:

Ingredients

  • 320 g of spaghetti
  • 500 g of cleaned and filleted red mullets
  • 300 g of cherry tomatoes
  • 2 cloves of garlic
  • 1 handful of chopped parsley
  • 1 glass of dry white wine
  • Extra virgin olive oil
  • Fine salt
  • Freshly ground black pepper
  • Chili pepper (optional)

Preparation

  1. Begin by cleaning the mullets, filleting them carefully and removing the bones. Set them aside.
  2. Wash the cherry tomatoes and cut them in half or quarters, depending on their size.
  3. In a large frying pan, sauté the garlic cloves in extra virgin olive oil. If you like, you can add a small piece of chili pepper to make the dish slightly spicy.
  4. Add the cherry tomatoes to the pan and let them cook over medium heat for about 5 minutes, until they start to break down.
  5. In the meantime, bring a pot of salted water to a boil to cook the spaghetti.
  6. Add the mullet fillets to the tomato sauce, letting them cook for a couple of minutes. Then deglaze with a glass of white wine. Let the alcohol evaporate and cook everything for about 10 minutes on low heat.
  7. When the spaghetti is al dente, drain it and transfer it to the pan with the mullet sauce. Mix well to flavor the pasta.
  8. Add the chopped parsley, a drizzle of raw extra virgin olive oil, and, if necessary, adjust the salt and pepper.
  9. Serve hot, with a sprinkling of fresh parsley on the finished dish.
