Spaghetti with Lobster alla Bellavista
17/11/2023Spaghetti with Lobster alla “Bellavista” is a refined dish that combines pasta with the prestigious crustacean for a sure-fire impressive result at the table. Here’s how you can prepare it:
Ingredients
- Spaghetti
- 1 fresh lobster (about 700-800 grams)
- Garlic
- Extra virgin olive oil
- Chili pepper (optional)
- Chopped parsley
- Salt
- Pepper
- White wine
Preparation
- First of all, if the lobster is alive, you must proceed with cooking it. Put it in the freezer for about 30 minutes to anesthetize it. Then, immerse it in boiling salted water for about 8-12 minutes.
- Once cooked, let it cool and then gently extract the meat from the shell. Cut it into chunks and set the shell aside which you will use for the presentation.
- In a large frying pan, fry the garlic in extra virgin olive oil and, if you like, a piece of chili pepper.
- Add the lobster chunks and sauté them briefly in the pan; deglaze with white wine and let the alcohol evaporate.
- Meanwhile, cook the spaghetti in plenty of salted water following the cooking times indicated on the package to achieve al dente pasta.
- Drain the spaghetti and pour them into the pan with the lobster, adding some of the cooking water if needed to bind everything together.
- Sauté the pasta together with the lobster to blend the flavors, adjusting with salt and pepper, and adding fresh chopped parsley raw.
- Serve the spaghetti using the lobster shells as decoration, placing the spaghetti in the center and arranging the shells around so they appear as if the lobster is “embracing” the pasta.
