Spaghetti with Guacamole and Crispy Salmon
17/11/2023Here is a recipe that blends the authenticity of Italian cuisine with the fresh flavors of guacamole, enriched by the presence of crispy salmon. It’s an unexpected dish that brings together two distant culinary traditions, creating a balance of flavors and textures.
Ingredients
- Spaghetti: 320 g (quantity for 4 servings)
- Ripe Avocados: 2
- Lime Juice: from 1 lime
- Red Onion: 1 small
- Cherry Tomatoes: 150 g
- Fresh Chili Pepper: 1 (optional)
- Fresh Coriander: a few leaves (you can substitute with parsley if you prefer)
- Salmon Fillet: 400 g
- Extra Virgin Olive Oil: as needed
- Salt and Pepper: as needed
Preparation
- Begin with the preparation of the guacamole. Cut the avocados in half, remove the pit, and scoop out the pulp with a spoon into a bowl.
- Mash the avocado pulp with a fork until creamy, add the lime juice to prevent it from browning, and mix well.
- Finely chop the red onion and quarter the cherry tomatoes. Add the onion and tomatoes to the guacamole.
- If you like a spicy touch, finely chop the chili pepper and add it to the bowl. Add the chopped coriander (or parsley), salt, pepper, and a drizzle of extra virgin olive oil. Stir everything together and set aside.
- Now let’s prepare the crispy salmon. Cut the salmon fillet into thin strips.
- Heat a drizzle of oil in a non-stick frying pan, and when it’s hot, add the salmon strips, cooking them until they’re crispy on both sides. Lightly salt them and set aside on paper towels.
- Cook the spaghetti in abundant salted water following the package instructions to achieve an al dente texture.
- Drain the spaghetti and combine with the guacamole, mixing well to allow the sauce to coat the pasta.
- Plate the spaghetti, garnishing with the crispy salmon strips, and if desired, add some fresh coriander or parsley on top.
Note:
For an additional Italian touch, you could add chopped fresh basil to the guacamole instead of coriander, and a grating of lime zest to enhance the freshness of the dish.
