Spaghetti with clams and shrimp

Ingredients

  • 320 g of spaghetti
  • 200 g of clams (true clams)
  • 200 g of shrimps
  • 1 clove of garlic
  • A bunch of fresh parsley
  • 100 ml of dry white wine
  • 4 tablespoons of extra virgin olive oil
  • Red pepper flakes to taste (optional)
  • Salt to taste

Preparation

  1. First, let the clams purge in a bowl of salted water for at least an hour so they can release any residual sand.

  2. In the meantime, clean the shrimp by removing the head, shell, and intestinal tract. Wash and finely chop the parsley.

  3. Rinse the clams under running water and place them in a large pan with a drizzle of oil and a clove of garlic. Cook them on high heat with the lid on until they have opened. Deglaze with white wine and let the alcohol evaporate.

  4. Filter the liquid released by the clams and set it aside. Remove the empty shells from the clams and set aside those that are full.

  5. In another pan, heat the remaining oil with some red pepper flakes (if desired) and another finely chopped garlic clove. Add the shrimps and sauté for a few minutes.

  6. Add the clams with their filtered liquid and let it flavor for a few minutes. Adjust salt if necessary.

  7. Meanwhile, cook the spaghetti in plenty of salted water following the package instructions to achieve the desired doneness (al dente is ideal).

  8. Drain the pasta lifting it directly into the pan with the clam and shrimp sauce, adding a ladle of cooking water if necessary to bind the sauce well.

  9. Add the chopped parsley and sauté for one minute so that the spaghetti will be well flavored.

  10. Serve the hot spaghetti and decorate with some clams in the shell for a touch of elegance.
