Spaghetti with clams and 'nduja

Ingredients

  • 320 g of spaghetti
  • 1 kg of fresh clams (preferably ‘veraci’)
  • 80 g of ‘nduja
  • 2 cloves of garlic
  • Fresh parsley to taste
  • 1 glass of dry white wine
  • Extra virgin olive oil to taste
  • Black pepper to taste
  • Salt to taste

Preparation

  1. First, the clams must be cleaned well to remove any sand residue. Put them in a bowl with salted water for at least 30 minutes. Then, rinse them under running water and set them aside.

  2. In a large pan, fry the garlic cloves with a drizzle of extra virgin olive oil until they turn golden brown. Remove the garlic if you prefer not to leave it in during cooking.

  3. Add the ‘nduja in pieces to the pan and let it melt slowly, stirring occasionally.

  4. Once the ‘nduja has melted evenly, add the clams, cook for a minute and then deglaze with the white wine. Cover with a lid and let the clams open over medium-high heat, it will take about 5-7 minutes. Remove any clams that remain closed.

  5. In the meantime, cook the spaghetti in abundant salted water following the package instructions to achieve al dente cooking.

  6. Drain the spaghetti while keeping some of the cooking water and transfer them to the pan with the clams. Mix well to combine the ingredients, adding a little cooking water if necessary to make it creamier.

  7. Serve the spaghetti with clams and ‘nduja hot, garnished with chopped fresh parsley and a grind of black pepper.
