Spaghetti with Clams and Mushrooms
17/11/2023Spaghetti with clams and mushrooms is a flavorful twist on the classic spaghetti with clams, enriched by the presence of mushrooms that offer an earthy and autumnal note. Here’s the recipe to prepare this delicious dish.
Ingredients
- 320 g of spaghetti
- 400 g of already cleaned clams
- 200 g of mushrooms (champignons, pioppini, or porcini depending on the season and preferences)
- 2 cloves of garlic
- 1 chili pepper (optional)
- A bunch of fresh parsley
- 100 ml of dry white wine
- 4 tablespoons of extra virgin olive oil
- Salt and pepper to taste
Preparation

Put the clams in a bowl with salted water for about 1 hour to expel any residual sand. Then rinse them under running water and set them aside.

In the meantime, clean the mushrooms by removing any dirt residues and slice them or dice them, depending on the type of mushroom chosen.

Heat the extra virgin olive oil in a large pan, add the peeled garlic cloves and the whole chili pepper to flavor the oil. Allow the garlic to turn golden and then remove it.

Add the mushrooms to the pan and sauté until golden. At this point, add the clams and cover with a lid to let them open over high heat.

Deglaze with the white wine and allow the alcohol to evaporate on high heat. When all the clams are open, remove those that have not opened (they should be discarded as they may not be good).

Meanwhile, cook the spaghetti in plenty of salted water following the time indicated on the package to achieve an al dente texture.

Drain the spaghetti and transfer them to the pan with the clams and mushrooms. Sauté everything over high heat for a few minutes to flavor the pasta.

Finish with chopped fresh parsley, adjust the salt and pepper if necessary and serve immediately.
