Spaghetti with Clams and Cherry Tomatoes

Ingredients
- 400 g of spaghetti
- 1 kg of true clams
- 250 g of cherry tomatoes
- 2 cloves of garlic
- Fresh parsley to taste
- Chili pepper (optional)
- 100 ml of white wine
- Extra virgin olive oil to taste
- Salt to taste
Preparation
- Start by placing the clams in a bowl with cold water and salt for about an hour to let them spit out the sand. After that, rinse them under running water.
- In a large pan, sauté the garlic cloves with a drizzle of extra virgin olive oil and, if you like, a hot chili pepper.
- As soon as the garlic turns golden, add the well-drained clams and deglaze with the white wine. Cover with a lid and let the clams open over medium heat.
- In the meantime, cut the cherry tomatoes in half. When all the clams have opened, remove those that remained closed and add the cherry tomatoes to the pan. Cook for a couple of minutes.
- While the clams are cooking, bring a pot of water to a boil for the pasta, remember to salt the water once it boils and cook the spaghetti al dente according to the package instructions.
- Drain the spaghetti and toss the pasta in the pan with the clams and cherry tomatoes to let the spaghetti absorb the flavors well.
- Finish the dish with a sprinkling of freshly chopped parsley, and if necessary, add a pinch of salt.
