Ingredients
- 320 g of spaghetti
- 500 g of cherry tomatoes
- 300 g of mushrooms
- 2 cloves of garlic
- Extra-virgin olive oil to taste
- Salt to taste
- Pepper to taste
- A bunch of basil
- Grated Parmesan cheese (optional)
Preparation
- Begin by cleaning the mushrooms with a damp cloth or a brush to remove any dirt, then slice them thinly.
- Wash the cherry tomatoes and cut them in half or into four if they are larger.
- In a large frying pan, heat a drizzle of oil and add the garlic cloves to flavor the oil. Once the garlic is golden, remove it from the pan.
- In the same pan, add the mushrooms and cook over medium-high heat for about 5-7 minutes, or until they are golden. Add the cherry tomatoes, salt, and pepper to taste.
- Lower the flame and continue cooking for another 5-10 minutes, until the cherry tomatoes begin to split, forming a light sauce.
- In the meantime, bring a pot of salted water to a boil and cook the spaghetti al dente following the cooking instructions on the package.
- Drain the spaghetti and add them to the pan with the cherry tomatoes and mushrooms. Toss them together to blend the flavors.
- Serve immediately, garnishing with fresh basil leaves and, if desired, a sprinkling of grated Parmesan cheese.
