Spaghetti with Arugula, Bell Peppers, and Stracciatella

Ingredients
- 320 g of spaghetti
- 1 red bell pepper
- 1 yellow bell pepper
- 100 g of arugula
- 200 g of buffalo stracciatella
- 2 cloves of garlic
- Extra virgin olive oil
- Salt to taste
- Black pepper to taste
- (Optional) A pinch of red chili flakes
Preparation

First, wash and dry the bell peppers. Cut them in half, remove the seeds and inner parts, then cut them into strips or cubes as you prefer.

In a large pan, sauté the crushed garlic cloves in a drizzle of extra virgin olive oil. If you like, you can add a pinch of red chili flakes to add some spice.

Add the bell peppers to the pan and cook over medium-low heat for about 10 minutes, or until they become tender but still slightly crisp. Remember to season with salt and pepper to taste.

While the bell peppers are cooking, bring a pot of salted water to a boil and cook the spaghetti al dente, following the cooking time instructions on the package.

Once the pasta is ready, drain it and reserve some of the cooking water. Add the spaghetti to the pan with the bell peppers and a bit of the cooking water to emulsify.

Turn off the heat and add the fresh arugula, gently stirring to let it wilt in the heat of the pasta.

Finally, distribute the buffalo stracciatella over the hot spaghetti, allowing the cheese to slightly melt with the warmth of the pasta and vegetables.

Serve the spaghetti and, if desired, add an additional drizzle of raw extra virgin olive oil and a grind of black pepper.
