Spaghetti Frittata

The spaghetti frittata is a very practical dish and represents a delicious way to use leftover pasta. Here is the recipe:

Ingredients

  • 200 grams of already cooked spaghetti (preferably al dente)
  • 4 large eggs
  • 100 grams of grated cheese (Parmesan or Pecorino)
  • Salt and pepper to taste
  • Olive oil or butter for greasing the pan
  • (Optional) chopped parsley, garlic, chili pepper, or other aromas to taste
  • (Optional) additions like cooked ham, bacon, diced vegetables, etc.

Preparation

  1. In a large bowl, beat the eggs with the grated cheese, salt, and pepper. If you wish to add aromatic herbs or other ingredients, do so at this stage.
  2. Add the already cooked spaghetti to the egg and cheese mixture and mix well to ensure the pasta is completely coated.
  3. Heat a non-stick pan with a drizzle of olive oil or a piece of butter. Pour the spaghetti and egg mixture into the pan and cook over medium-low heat.
  4. Once the edges start to turn golden and the bottom seems solid, help yourself with a plate or lid to gently flip the frittata and cook the other side until it is golden brown.
  5. Once cooked on both sides, the spaghetti frittata is ready to be served.

You can personalize the recipe with what you have in the fridge: add some sautéed vegetables before the pasta or cubes of cheese for an extra touch of flavor. It is a versatile dish that lends itself to many variations. Enjoy your meal!
