Spaghetti and shrimp

Spaghetti with shrimp is a delicious dish of maritime origin that combines pasta with the flavors of the sea. Here is the recipe for an excellent plate of spaghetti with shrimp:

Ingredients

  • 320 g of spaghetti
  • 400 g of shrimp, already cleaned
  • 2 cloves of garlic
  • Chopped fresh parsley, to taste
  • 200 ml of dry white wine
  • 250 g of cherry tomatoes
  • Extra virgin olive oil, to taste
  • Salt and pepper, to taste
  • Chili pepper (optional), to taste

Preparation

  1. Start by bringing a large pot of salted water to a boil to cook the spaghetti.
  2. In the meantime, in a wide pan, heat a drizzle of extra virgin olive oil and sauté the whole garlic cloves (you can remove them later, if you prefer) and the chili pepper if you are using it.
  3. Add the cleaned shrimp to the pan and sauté for a couple of minutes per side, then deglaze with the white wine. Let the alcohol evaporate on high heat.
  4. Cut the cherry tomatoes in half and add them to the pan with the shrimp. Cook for 5-10 minutes until the tomatoes are slightly wilted and have released their juice, creating a sauce.
  5. Meanwhile, cook the spaghetti in boiling water following the package instructions for al dente.
  6. Drain the al dente spaghetti, reserving some of the cooking water, and transfer it to the pan with the shrimp and tomato sauce.
  7. Stir well, adding some of the cooking water if necessary to cream the pasta and create a homogeneous sauce.
  8. Turn off the heat, add the chopped fresh parsley and mix well.
  9. Plate the spaghetti with shrimp, finishing with a sprinkling of pepper and, if you like, more fresh parsley.

Curiosity

It is not uncommon to find seafood pasta enriched with grated lemon zest to add freshness to the dish. Additionally, in some variations of the recipe, you can prepare a base with assorted seafood to give more flavor to the dish.
