Sorrento-style plaice fillet

Ingredients
- 4 plaice fillets
- 500 g of cherry tomatoes
- 2 cloves of garlic
- 200 g of buffalo mozzarella (or fior di latte)
- A few leaves of fresh basil
- Extra virgin olive oil
- Salt and pepper to taste
- Dried oregano (optional)
- Pitted black olives (optional)
Preparation
- Start by heating a stream of extra virgin olive oil in a large pan. Add the peeled garlic cloves and let them brown slightly.
- Cut the cherry tomatoes in half and add them to the pan. Season with salt and pepper, and if you like, add a bit of dried oregano too. Cook over medium-low heat for about 10-15 minutes, until the tomatoes begin to break down and create a sauce.
- Meanwhile, slice the mozzarella or cut it into cubes and let it drain to remove excess water.
- Place the plaice fillets in the pan with the tomatoes, add salt and pepper to taste. Cover with a lid and cook for about 5-6 minutes. The fillets will be ready when they become white and opaque.
- Add the sliced mozzarella on top of the fish fillets and let it melt slightly, still covered and over medium-low heat. If you wish, you can also add some black olives for an extra burst of flavor.
- Remove the plaice fillets from the heat and garnish with fresh basil leaves before serving.
If buffalo mozzarella is not available, you can also use a good quality fior di latte mozzarella, which will melt perfectly with the warmth of the fish and tomato sauce.
