Ingredients
- 500g of chicken breast
- 250g of buffalo mozzarella (or fiordilatte)
- 400g of cherry tomatoes or San Marzano tomatoes
- 1 clove of garlic
- Fresh basil to taste
- Extra virgin olive oil to taste
- Salt and pepper to taste
- (Optional) Taggiasca olives or Gaeta olives
Preparation
- Begin by cutting the chicken breast into “straccetti”, which means thin strips, then lightly salt and pepper them.
- Heat a drizzle of olive oil in a pan and briefly sauté the garlic clove without letting it brown too much. You can remove it as soon as it has flavored the oil if you prefer.
- Add the chicken “straccetti” to the pan and brown them on all sides over high heat.
- In the meantime, cut the cherry tomatoes in half or into quarters and the mozzarella into cubes.
- Once the chicken is golden, add the tomatoes, lower the flame, and cook for about 10 minutes, until the tomatoes start to break down and create a sauce.
- Add the mozzarella and olives (if using), then cook for another 5 minutes or until the mozzarella begins to melt.
- Turn off the heat and add the basil leaves torn by hand.
- Gently mix and serve immediately, hot and stringy.
