Jam and Yogurt Fluffies

Jam and Yogurt Fluffies are delicious sweets, easy to make and perfect for breakfast or as a snack. Here is the recipe to prepare them:

Ingredients

  • 250 g of all-purpose flour
  • 125 g of sugar
  • 125 g of white yogurt (Greek or natural)
  • 2 eggs
  • 80 ml of seed oil
  • 1 sachet of baking powder
  • A pinch of salt
  • Jam of your choice (for example, apricot, strawberry, etc.)
  • Icing sugar (optional, for decoration)

Preparation

  1. In a large bowl, beat the eggs with the sugar until you get a light and foamy mixture.
  2. Add the yogurt and mix well.
  3. Slowly pour in the oil and continue mixing.
  4. Sift the flour with the baking powder and a pinch of salt, then gradually incorporate them into the liquid mixture, mixing carefully to avoid lumps.
  5. Butter and flour some muffin moulds or use paper liners if you prefer.
  6. Fill them about halfway with the dough and then add a teaspoon of jam in the center of each.
  7. Cover the jam with more dough until the moulds are ¾ full.
  8. Preheat the oven to 180 °C (356 °F) and bake the Fluffies for about 20 minutes or until they are golden brown and soft to the touch.
  9. Let them cool before removing from the moulds.
  10. Dust the Fluffies with icing sugar before serving, if you wish.
