- 100g of brown sugar
- 100g of soft butter
- 1 large egg
- 1 packet of baking powder
- 1 pinch of salt
- 2 tablespoons of very strong espresso coffee (or 2 teaspoons of instant coffee dissolved in a bit of hot water)
- 1 teaspoon of vanilla extract (optional)
- Powdered sugar for decorating (optional)
Preparation
- In a bowl, mix the flour with the baking powder and pinch of salt.
- In a larger bowl, beat the soft butter with the brown sugar until you have a homogeneous mixture.
- Add the egg to the mixture of butter and sugar, and continue to beat until all the ingredients are well blended.
- Incorporate the vanilla extract and the espresso coffee into the mixture.
- Gradually add the flour mixture, mixing gently until you get a homogeneous dough.
- Preheat the oven to 180°C and prepare a baking sheet with parchment paper.
- Using a spoon, take small portions of dough and place them on the baking sheet, leaving a little space between each cookie as they will expand during baking.
- Bake for about 12-15 minutes or until the edges of the cookies are slightly golden.
- Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack until completely cooled. If desired, you can dust them with powdered sugar once they are cool.
Curiosity
Coffee is a much-loved ingredient in Italian pastry, often used to flavor creams, custard desserts, and cookies. In this recipe, the espresso coffee makes the cookies particularly aromatic and gives an intense flavor that pairs well with the sweetness of the brown sugar.
Pair these cookies with a good Italian coffee or, if you prefer something lighter, a slightly spiced black tea like a chai or Earl Grey. Enjoy your meal!
