Soft Chocolate Cookies

Here’s the recipe for soft chocolate cookies that may remind you of classic American cookies, but with an Italian twist in the choice of ingredients and the method of preparing the dough.

Ingredients

  • 125 g of soft butter
  • 150 g of brown sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 175 g of 00 flour
  • 30 g of unsweetened cocoa powder
  • ½ teaspoon of baking powder
  • ½ teaspoon of baking soda
  • A pinch of salt
  • 100 g of chocolate chips or chocolate broken into pieces, as preferred

Preparation

  1. Preheat the oven to 180 °C and prepare a baking tray by lining it with parchment paper.
  2. In a bowl, cream the soft butter with the brown sugar until you have a smooth and creamy mixture.
  3. Add the egg and the vanilla extract and continue to mix well.
  4. In a separate bowl, sift together the flour, cocoa, baking powder, baking soda, and salt, then incorporate these dry ingredients into the butter, sugar, and egg mixture.
  5. Mix well until you obtain a uniform dough. Finally, add the chocolate chips or chocolate pieces and fold in gently.
  6. Using a spoon, scoop out the dough and form balls that you will place on the tray, leaving some space between them as they will spread during cooking.
  7. Bake in the oven for about 12-15 minutes. The cookies will still be soft when you take them out of the oven, but will firm up as they cool.
  8. Let them cool on the tray for a few minutes and then transfer them onto a rack until they are completely cooled.
