Soft Apple and Turmeric Cookies

Soft apple and turmeric cookies are a real treat and a great way to combine sweet and spicy flavors. Here is the recipe to prepare them.

Ingredients

  • 2 medium apples, peeled and grated
  • 250 g of type 00 flour
  • 100 g of brown sugar
  • 80 g of butter at room temperature
  • 1 large egg
  • 1 teaspoon of baking powder for sweets
  • 1 teaspoon of turmeric powder
  • 1 pinch of salt
  • 1/2 teaspoon of ground cinnamon (optional)
  • Icing sugar for decorating (optional)

Preparation

  1. Preheat the oven to 180 °C and line a baking tray with parchment paper.

  2. In a large bowl, mix the flour with the baking powder, turmeric, cinnamon, and pinch of salt.

  3. In another bowl, cream the butter with the brown sugar until you get a smooth and fluffy mixture. Incorporate the egg and mix well.

  4. Add the grated apples to the butter mixture and stir.

  5. Gradually add the dry ingredients (the flour and spice mix) to the wet mixture and stir until you get a consistent dough.

  6. With the help of a spoon, scoop portions of dough onto the tray, leaving some space between one cookie and the other, as they will expand during baking.

  7. Bake for about 15-20 minutes or until the edges of the cookies start to lightly brown.

  8. Remove the cookies from the oven and let them cool on a wire rack.

  9. If you wish, you can sprinkle the cookies with icing sugar before serving.

Turmeric, besides being an excellent spice with anti-inflammatory properties, gives the cookies a bright yellow color and a slight exotic flavor that combines well with the sweetness of the apples and the aroma of cinnamon.
