Soft Apple Biscuits

Ingredients
- 2 medium apples
- 250 g of type 00 flour
- 100 g of sugar
- 50 g of butter
- 1 egg
- 1 teaspoon of baking powder
- 1 pinch of salt
- 1 teaspoon of cinnamon (optional)
- Icing sugar (for garnish)
Preparation
- Preheat the oven to 180 °C and line a baking tray with baking paper.
- Peel the apples and cut them into small cubes.
- In a bowl, mix the flour with the sugar, a pinch of salt, and the baking powder.
- Add the butter at room temperature and crumble it with your fingers into the flour mixture until you get a sandy consistency.
- Incorporate the egg and knead until the dough is smooth.
- Add the apple cubes and cinnamon (if desired) to the dough and gently mix, making sure the apples are evenly distributed.
- With the help of two spoons, scoop portions of the dough onto the previously prepared tray, leaving some space between each biscuit.
- Bake in the oven for about 15-20 minutes or until the biscuits are lightly golden.
- Remove the biscuits from the oven and let them cool on a wire rack.
- Once cooled, dust the biscuits with icing sugar.
