Soft Apple Biscuits

Ingredients

  • 2 medium apples
  • 250 g of type 00 flour
  • 100 g of sugar
  • 50 g of butter
  • 1 egg
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 1 teaspoon of cinnamon (optional)
  • Icing sugar (for garnish)

Preparation

  1. Preheat the oven to 180 °C and line a baking tray with baking paper.
  2. Peel the apples and cut them into small cubes.
  3. In a bowl, mix the flour with the sugar, a pinch of salt, and the baking powder.
  4. Add the butter at room temperature and crumble it with your fingers into the flour mixture until you get a sandy consistency.
  5. Incorporate the egg and knead until the dough is smooth.
  6. Add the apple cubes and cinnamon (if desired) to the dough and gently mix, making sure the apples are evenly distributed.
  7. With the help of two spoons, scoop portions of the dough onto the previously prepared tray, leaving some space between each biscuit.
  8. Bake in the oven for about 15-20 minutes or until the biscuits are lightly golden.
  9. Remove the biscuits from the oven and let them cool on a wire rack.
  10. Once cooled, dust the biscuits with icing sugar.
