Snowy White Yule Log
17/11/2023Here’s the recipe for the snowy white Christmas Yule log, which is a delicious twist on the classic Christmas log, also known as Bûche de Noël.
Ingredients

For the log base:
- 4 eggs
- 120g of sugar
- 120g of flour
- A pinch of salt

For the white buttercream:
- 200g of soft butter
- 150g of powdered sugar
- 1 teaspoon of vanilla extract or the seeds of a vanilla pod

For the snowy decoration:
- 100g of shredded coconut
Preparation
- Begin by preparing the base for the log. In a bowl, whip the eggs with the sugar until you get a frothy and pale mixture.
- Sift the flour with a pinch of salt and gently fold it into the egg mixture, being careful not to deflate it.
- Spread the batter onto a baking tray lined with parchment paper and level it so that it’s uniformly thick.
- Bake in a preheated oven at 180°C for about 10 minutes or until the surface is golden brown.
- Once baked, flip the sponge cake onto a damp kitchen towel, roll it gently, and let it cool.
For the white buttercream: 6. In a bowl, beat the soft butter with powdered sugar until you achieve a smooth and homogeneous cream. Add the vanilla extract and mix well.
Assembling the log: 7. Gently unroll the now cool sponge, spread a layer of buttercream over it, and roll it up again, this time without the kitchen towel. 8. Cut one end of the roll diagonally and place it on the side of the log to simulate a branch. 9. With the remaining buttercream, cover the entire log including the added piece. 10. Use a fork or toothpick to create a wood bark effect. 11. Now comes the final touch: sprinkle the log generously with shredded coconut, creating a snowy effect.
