Tagliolini with Smoked Salmon

Ingredients

  • 350 g of fresh or dry tagliolini
  • 200 g of smoked salmon, cut into strips
  • 200 ml of cooking cream
  • 1 small onion or shallot, finely chopped
  • 2 tablespoons of vodka or brandy (optional)
  • Juice of 1/2 lemon
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish
  • Caviar or salmon roe for garnish (optional)

Preparation

  1. In a pan, heat a drizzle of extra virgin olive oil and sauté the chopped onion or shallot until it becomes transparent.

  2. Add the cooking cream and let it warm up without bringing it to a boil.

  3. Pour in the vodka or brandy, if using, and let the alcohol evaporate.

  4. Add the smoked salmon, stir gently, and cook for about 2 minutes over low heat.

  5. Season with lemon juice, salt, and pepper, mixing well.

  6. Cook the tagliolini in plenty of salted water until al dente.

  7. Drain the pasta, preserving some of the cooking water.

  8. Transfer the tagliolini into the pan with the smoked salmon sauce.

  9. If necessary, add a little cooking water to achieve the desired consistency.

  10. Mix gently to combine the pasta with the sauce.

Serve the Tagliolini with Smoked Salmon immediately, garnishing with fresh dill or parsley and, if you wish, add a touch of luxury with caviar or salmon roe. It is a dish to be savored on a special evening, with a good glass of white wine. Enjoy your meal!
