Smoked Penne

Smoked Penne is a dish full of flavor, thanks to the use of ingredients that lend a smoked taste. Here is the recipe for preparing them:

Ingredients

  • 320 g of penne pasta
  • 150 g of diced speck
  • 100 g of smoked scamorza cheese
  • 200 ml of cooking cream
  • 50 ml of milk
  • 1 small onion
  • Extra virgin olive oil
  • Salt and pepper q.b.

Preparation

  1. Start by finely chopping the onion. In a large skillet, heat a drizzle of extra virgin olive oil and sauté the onion until it becomes translucent.
  2. Add the diced speck and let it brown until it becomes crispy.
  3. Meanwhile, cook the penne in plenty of salted water following the cooking times indicated on the package to keep them al dente.
  4. While the pasta is cooking, add to the skillet with the speck the small diced smoked scamorza, the cream, and the milk. Mix well and let it cook over medium-low heat until the scamorza has melted, creating a creamy sauce. Adjust with salt and pepper.
  5. Drain the al dente pasta and transfer it into the skillet with the sauce. Turn on the heat and mix well to blend the ingredients.
  6. Serve hot, possibly adding a sprinkling of ground black pepper or aromatic herbs to taste.
