Small Chicken Breast Flans

Ingredients

  • 300 g of chicken breast
  • 2 eggs
  • 100 ml of cooking cream
  • 30 g of grated Parmesan cheese
  • Salt and pepper to taste

  • A pinch of nutmeg (optional)

Preparation:

  1. Preheat the oven to 180 °C.
  2. Finely chop the chicken breast with a knife or with the help of a food processor.
  3. In a bowl, beat the eggs with a pinch of salt and pepper.
  4. Add the chopped chicken, cooking cream, grated Parmesan, and, if you like, a pinch of nutmeg to the egg mixture.
  5. Butter and sprinkle the flan or muffin molds with breadcrumbs. This will help to unmold them more easily after cooking.
  6. Fill the molds with the mixture and level it with the back of a spoon.
  7. Place the molds in a baking dish and pour hot water inside up to the middle of the height of the molds, thus preparing a bain-marie.
  8. Bake for about 20-25 minutes or until the flans are golden brown and well cooked in the center.
  9. Remove from the oven and let cool for a few minutes before gently unmolding them with the help of a spatula or a small knife.
