Tomato slices with thyme and marjoram

Ingredients
- 4 slices of meat (veal or beef, depending on preference)
- 400 g of ripe tomatoes or canned peeled tomatoes
- 1 small onion
- 2 cloves of garlic
- 4 sprigs of fresh thyme
- 2 sprigs of fresh marjoram
- Extra virgin olive oil (to taste)
- Salt and pepper (to taste)
Preparation
- Begin by crushing the tomatoes if you have chosen fresh ones. If you are using canned tomatoes, you could simply smash them or cut them into pieces.
- Finely chop the onion and garlic, and sauté them in a pan with a drizzle of extra virgin olive oil until they become translucent.
- Add the chopped tomatoes into the pan and cook over medium-low heat for about 15-20 minutes, until slightly reduced.
- While the sauce is cooking, season it with salt and pepper to taste and add the thyme and marjoram leaves, previously washed and dried.
- In the meantime, season the slices of meat with salt and pepper on both sides.
- In a second pan, heat a drizzle of oil and cook the meat slices for about 2-3 minutes per side, until they are golden brown and cooked to your liking.
- Once ready, transfer the slices into the pan with the tomato sauce, cover, and let cook for another 5 minutes over low heat, so that the meat is well flavored.
- Serve the slices hot, spooning the tomato sauce over them and garnishing with a sprig of fresh marjoram or thyme.
As an Italian touch, if you wish, you can finish the dish with a sprinkling of grated Parmesan or with a few leaves of fresh basil for an even more Mediterranean aroma.
