Tomato slices with thyme and marjoram

Ingredients

  • 4 slices of meat (veal or beef, depending on preference)
  • 400 g of ripe tomatoes or canned peeled tomatoes
  • 1 small onion
  • 2 cloves of garlic

  • 2 sprigs of fresh marjoram
  • Extra virgin olive oil (to taste)
  • Salt and pepper (to taste)

Preparation

  1. Begin by crushing the tomatoes if you have chosen fresh ones. If you are using canned tomatoes, you could simply smash them or cut them into pieces.
  2. Finely chop the onion and garlic, and sauté them in a pan with a drizzle of extra virgin olive oil until they become translucent.
  3. Add the chopped tomatoes into the pan and cook over medium-low heat for about 15-20 minutes, until slightly reduced.
  4. While the sauce is cooking, season it with salt and pepper to taste and add the thyme and marjoram leaves, previously washed and dried.
  5. In the meantime, season the slices of meat with salt and pepper on both sides.
  6. In a second pan, heat a drizzle of oil and cook the meat slices for about 2-3 minutes per side, until they are golden brown and cooked to your liking.
  7. Once ready, transfer the slices into the pan with the tomato sauce, cover, and let cook for another 5 minutes over low heat, so that the meat is well flavored.
  8. Serve the slices hot, spooning the tomato sauce over them and garnishing with a sprig of fresh marjoram or thyme.
